If you know anyone who hates #Karela ( #BitterGourd ),make this Bharwan(stuffed)Karela for them.उंगलियां चाटते रह जाएंगे 😋 I've been wanting to make these भरवां करेला for a long time. My Maharashtrian cook at #Mumbai had absolutely no idea that Karela can be made this way.She has been feeding me same Karela 'bhujiya' for months which I find meh(skin almost intact, basically bitter rings of Karela made with Aloo). This UP-style Bharwan Karela recipe was picked up by my mother during our #Lucknow days(like many other good things - gujiya and gulab jamun included 😋 ) It's a labor intensive dish and uses more oil than normal, but you can find creative ways to cut oil consumed. Also I have used very basic masalas which is my preferred style. Recipe - 1.Peel Karela completely(I have used 4 karelas.Smaller the better).Remove scales till light green skin is visible below. 2.Remove seeds and boil Karela in hot water to which a bit of salt has been added. 3.Drain salted water and cool the Karela( You can dunk in ice water if short on time).Wipe dry. 4.Chop two large onions. Fry till pink. Add sabut jeera(cumin seeds),salt to taste and amchoor powder. 5.Stuff the onion filling into dried karelas.Tie karelas with a clean, white cotton thread to prevent contents from spilling. 6.Shallow fry Karela till browned nicely on all sides(keep turning from time to time). 7.Serve with roti or Parathas(remove thread before eating 🙄आज कल यह भी बताना पढ़ता है) I am telling you,you have to try this dish once! It's finger-licking good. You can thank me later. #lunchtime #Indiacuisine #maakehaathkakhana
